Ingredients:
For the Salmon Burgers:
- 3-4 fresh salmon fillets, skin removed and finely chopped (650 -700g)
- 1/2 cup panko breadcrumbs
- 1 egg, lightly beaten
- 2 green onions, finely chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for brushing the grill)
- For the Avocado Lime Sauce:
- 1 ripe avocado, pitted and peeled
- 2 tbsp plain Greek yoghourt
- 2 tbsp lime juice - 1/2 tsp lime zest
- 1 garlic clove, minced
- Salt and pepper to taste
- For Serving:
- Whole wheat burger buns, toasted
- Lettuce leaves - Tomato slices
- Red onion slices
Instructions:
1. Prepare the Salmon Burgers:
- In a large bowl, combine the chopped salmon, panko breadcrumbs, beaten egg, green onions, parsley, Dijon mustard, lemon juice, lemon zest, salt, and black pepper.
- Mix until well combined. If the mixture feels too wet, add a bit more panko breadcrumbs. - Form the mixture into 4-6 patties, depending on your desired size. Place the patties on a plate and refrigerate for at least 30 minutes to help them firm up.
2. Make the Avocado Lime Sauce:
- In a small bowl, mash the avocado with a fork until smooth.
- Add the Greek yoghourt, lime juice, lime zest, minced garlic, salt, and pepper. Mix well until smooth and creamy. Adjust seasoning to taste. Cover and refrigerate until ready to use.
3. Grill the Salmon Burgers:
- Preheat your grill to medium-high heat.
- Brush the grill grates with olive oil to prevent sticking.
- Place the salmon patties on the grill and cook for about 4-5 minutes per side, or until the burgers are cooked through and have a nice char.
4. Assemble the Burgers:
- Toast the whole wheat burger buns on the grill for a minute or two, until lightly browned.
- Spread a generous amount of the avocado lime sauce on the bottom half of each bun.
- Place a grilled salmon patty on top, followed by a lettuce leaf, a slice of tomato, and a few red onion slices.
- Cover with the top half of the bun.
5. Serve: - Serve the grilled salmon burgers with a side of mixed greens, sweet potato fries, or your favourite barbecue sides.
