Sweet Potato & Quinoa Burgers - these are a great, quick and easy recipe that are packed with flavour. They are perfect for a quick healthy dinner or make smaller patties and use like falafel in a wrap for a tasty lunch!

 

Ingredients: 

- 1 cup cooked quinoa

- 1 large sweet potato, mashed

- 1/2 cup breadcrumbs (gluten-free if desired)

- 1/4 cup chopped fresh parsley

- 1 tsp smoked paprika

- 1/2 tsp garlic powder

- Salt and pepper to taste

Cooking Instructions:

1. In a bowl, combine the cooked quinoa, mashed sweet potato, breadcrumbs, parsley, smoked paprika, garlic powder, salt, and pepper. Mix until well combined.

2. Form the mixture into burger-sized patties.

3. Heat a drizzle of olive oil in a pan over medium heat.

4. Cook the patties for 4-5 minutes on each side, or until golden brown and heated through.

5. Serve the burgers on buns or in a wrap, or enjoy them atop a fresh salad.
