Saint Giles is a matured, organic cow's milk cheese that is made using the curd washed process, which removes all the whey during making. The cheese has a very smooth buttery texture, similar to Port Salut or Saint Paulin, and a long, moreish, easy to enjoy flavour. Saint Giles melts extremely well and is named after the Church in Horsted Keynes, where the Dairy is based.
